I voted for the Pan Roasted Glazed Rockfish with Peas and Carrots that was submitted by Chef Tafari Campbell of Maryland. The picture looks so appetizing and I love the idea of seafood with something other than rice. I love peas and carrots so this was an easy choice for me. My second favorite would have been the one with Redfish because Redfish is a big delicacy here in Florida. Titusville and New Smyrna Beach are famous for their Redfish tournaments.
The only thing that I would change really would be the veal stock for the sauce. I do not like veal or even the thought of eating anything having to do with it so I would have to find something else to use. I would probably use just a regular beef stock rather, it may taste a little different but that's ok with me. I love the Great American Seafood Cookoff because it promotes using domestic seafood. This seafood is of course the freshest of the fresh, it’s local so it helps our economy, and has great taste.

I love seafood but here in WI we do not get the freshest stuff and it is so expensive.
I will have to look and see what they have recipe wise to vote myself.
